A Stock ROM/Firmware is an official software that is designed by the manufacturer for a particular device and it comes default with android mobiles or tablets. It makes every manufacturer's device unique in terms of looks and features.
A Stock ROM is one type that does not undergo any cosmetic/functional changes in the code by hardware manufacturer and thus do not void your device's warranty conditions. Using a Custom ROM will void your warranty conditions.
Usually, Stock firmware are chosen most over Custom firmware because they undergo multiple testing phases ensuring better Security, stability, and a bug free package before deployment or release.
Android devices with Stock ROM's usually come with lots of pre-installed apps. Sometimes these apps are good enough to attract customers such as music players, app store, live wallpapers, calendar, weather and so on. However sometimes these pre-installed apps are seldom used by users. At that case having non un-install able aps becomes disadvantage. Sometimes these apps are needed to have premium subscription.
